Refrigerated Foods
Some high-quality foods need refrigeration.
We love the convenience of shelf-stable canned foods—but some foods cannot be safely preserved by water-bath canning, and pressure canning would ruin the qualities that make them special. We still want you to enjoy these wonderful Italian foods, so we prepare and handle them as refrigerated products.
We fully cook each product, pack it into glass jars while it is fresh-from-the-pot hot, and process the filled jars in a water bath. As soon as the jars have cooled enough to be refrigerated safely, they go into cold storage and remain refrigerated until they are given or sent to you.
Products shipped or delivered are packed in insulated containers with frozen gel packs to keep them cold. If you pick up your order at the farm or a farmers market, take it home promptly (a few hours) and place it in the refrigerator.
Keep these products refrigerated at all times. Unopened jars should be used within two weeks. Once opened, please use the contents within one or two days.
